French Style Chocolate Truffles

Well, “French” style truffles seem really rich. It has heavy cream and butter. It also take much longer than the other recipes (7-8 hrs). Some suggested a few short cut, such as warming cream first and pour on chocolate, and add butter immediately after creams and chocolate are mixed. Adding water while melting chocolate may not be a good idea… And of course, we need to use organic chocolate!
