Gourmet Organic Chocolate Truffles

This recipe uses eggs instead of heavy cream. Some mentioned that it makes slightly different texture and flavor, but it looks good to me. Probably it needs to keep in a refrigerator, as it seems softer than truffles made with heavy cream. As usual, use organic dark chocolate for the better result!
